Sesame-ginger beef and asparagus stir-fry with oriental sesame oil, , , minced peeled fresh ginger, beef broth, fish sauce, sugar.

Ingredients

  • 1 tsp. oriental sesame oil
  • 1 pound thin asparagus, trimmed, cut on diagonal into 1 1/2-inch pcs.
  • 1 small bunch green onions, cut on diagonal into 1 1/2-inch pcs.
  • 1 1/2 tbsps. minced peeled fresh ginger
  • 2/3 cup beef broth
  • 1 tbsp. fish sauce
  • 1 tsp. sugar

For compote

  • 2 tart apples such as Granny Smith, cut into 1/3-inch dice
  • 1 cup brandy
  • 1/4 cup sugar
  • 4 cups blackberries , halved lengthwise
  • 1 tbsp. unsalted butter
  • 1 tsp. thinly sliced fresh mint

For venison

  • 8 venison rib chops or 1 rack of venison* ,cut into 8 chops
  • 2 tbsps. finely chopped fresh rosemary
  • 1 tsp. salt
  • 1 tsp. cracked black pepper
  • 2 tbsps. vegetable oil

For filling

  • Special equipment: 2 glass or ceramic baking dishes, one 13 by 9 inches and one 8 inches square

  • 4 6-ounce monkfish fillets , skin removed
  • 1 tbsp. olive oil

  1. Step 1 Heat 2 tablespoons peanut oil in large skillet over high heat. Working in batches, add beef in single layer and cook, undisturbed, until meat begins to blacken on bottom, about 1 1/2 minutes.
