Smoky radicchio risotto "michu" with golden raisins, reduced-sodium chicken broth, water, 1/2 medium onion, chopped, olive oil, thinly sliced radicchio, arborio rice, dry white wine, chopped smoked mozzarella or scamorza, grated parmigiano-reggiano.   • 1/2 cup golden raisins
  • 3 cups reduced-sodium chicken broth
  • 3 cups water
  • 1/2 medium onion, chopped
  • 3 tbsps. olive oil
  • 2 cups thinly sliced radicchio
  • 1 1/2 cups Arborio rice
  • 2/3 cup dry white wine
  • 1/2 cup chopped smoked mozzarella or Scamorza
  • 1/4 cup grated Parmigiano-Reggiano

Directions

  1. Step 1 Cook onion with 1/4 teaspoon salt in oil in a 5-quart heavy pot over medium heat, stirring occasionally, until golden, about 7 minutes.
