Southwestern chicken and pasta salad with olive oil, diced cooked chicken, green onions, chopped, plum tomatoes, chopped, 15-ounce can golden hominy, drained, 15-ounce can black beans, drained, 12-ounce bottle mild green taco sauce, chopped fresh cilantro.

Ingredients

  • 4 tbsps. olive oil
  • 2 cups diced cooked chicken
  • 8 green onions, chopped
  • 6 plum tomatoes, chopped
  • 1 15-ounce can golden hominy, drained
  • 1 15-ounce can black beans, drained
  • 1 12-ounce bottle mild green taco sauce
  • 1 cup chopped fresh cilantro

Caramel sauce:

Pudding:

  • 7 cups 3/4-inch cubes crustless brioche or egg bread
  • 6 large eggs
  • 3/4 cup sugar
  • 1/8 teaspoon plus 1/4 tsp. salt
  • 1 1/2 cups heavy whipping cream
  • 1 1/2 cups half and half
  • 1 tsp. vanilla extract
  • 1/4 cup dark brown sugar
  • 3 tbsps. unsalted butter
  • 2 tbsps. dark rum
  • 1 tbsp. fresh lemon juice
  • 4 medium just-ripe bananas, peeled, cut lengthwise in half, then crosswise into 1/3-inch pcs.

  • 1 tart pan or 2 tart pans

For cooking and serving crêpes

  • 4 tsps. vegetable oil
  • 6 oz. fresh soybean or mung-bean sprouts , trimmed
  • 1/4 cup chopped scallions
  • 1 small head green or red leaf lettuce
  • 1/2 cup loosely packed fresh mint leaves
  • 1/2 cup loosely packed fresh basil leaves
  • 1/2 cup loosely packed fresh cilantro sprigs
  • Lime wedges

Directions

  1. Step 1 Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain; rinse under cold running water and drain again.
