Spiced apple pie with raisins with granny smith apples, peeled, cored, cut into 1/2-inch cubes, sugar, golden raisins, all purpose flour, minced crystallized ginger, dark brown sugar, ground cinnamon, unsalted butter, melted.

Ingredients

Crust

  • 3 cups all purpose flour
  • 2 tbsps. sugar
  • 1 1/4 tsps. salt
  • 3/4 cup chilled solid vegetable shortening, diced
  • 9 tbsps. chilled unsalted butter, diced
  • 7 tbsps. ice water
  • 2 1/2 tsps. apple cider vinegar

Filling

  • 4 lb. Granny Smith apples, peeled, cored, cut into 1/2-inch cubes
  • 3/4 cup sugar
  • 1/2 cup golden raisins
  • 3 tbsps. all purpose flour
  • 2 tbsps. minced crystallized ginger
  • 2 tbsps. dark brown sugar
  • 2 tsps. ground cinnamon
  • 1/4 cup unsalted butter, melted

For cream topping

  • Special equipment: 3 baking pans and a 3 1/2-quart straight-sided glass trifle or soufflé dish

For assembly

  • Coconut buttercream
  • 3 1/2 cups fresh coconut shavings or 2 2/3 cups sweetened flaked coconut

Filling and frosting cakes

  • 2 11-inch-diameter tart-pan bottoms or cardboard rounds
  • 1 8-inch-diameter tart-pan bottom or cardboard round
  • 1 5-inch-diameter tart-pan bottom or cardboard round
  • 14 12-inch-long, 1/4-inch-diameter wooden dowels

Decoration

  • Mix of large and tiny white roses and fresias

Directions

For crust:

  1. Step 1 Mix flour, sugar and salt in processor. Add shortening and butter. Using on/off turns, process until mixture resembles coarse meal.

  2. Step 2 Transfer flour mixture to large bowl. Combine 7 tablespoons ice water and 2 1/2 teaspoons vinegar in small bowl; pour over flour mixture.

  3. Step 3 Stir with fork until moist clumps form, adding more water by teaspoonfuls if needed. Gather dough into ball; divide into 2 pieces.

  1. Step 4 Preheat oven to 400°F. Mix all ingredients in large bowl; toss. Roll out 1 dough disk on lightly floured surface to 13-inch round.

  2. Step 5 Transfer to 9-inch-diameter deep-dish glass pie dish. Trim overhang to 1 inch. Spoon filling into dough-lined dish.

  3. Step 6 Roll out second dough disk on lightly floured surface to 13-inch round. With star cookie cutter, cut out several stars from center of crust.

  4. Step 7 Fold crust in half and transfer to top of filling. Unfold crust. Press top and bottom crust edges together to seal.
  5. Step 8 Bake pie until apples are tender and juices are bubbling thickly, covering edges with foil if browning too quickly, about 1 hour 45 minutes.
