Spiced mango-mojito sauce with large mangoes, peeled, pitted, diced, plain whole-milk yogurt, sugar, spiced rum, fresh key lime juice, finely chopped fresh mint.

  • 1 cup lukewarm water
  • 1 envelope active dry yeast, divided
  • 1 cup all purpose flour, divided

Dough:

  • 1 1/2 cups lukewarm water
  • 2 tsps. fine sea salt
  • 1 envelope active dry yeast
  • 6 cups all purpose flour
  • Olive oil
  • Yellow cornmeal
  • Sauces and toppings

Directions

  1. Step 1 Purée mangoes in blender or processor until smooth. Transfer 1 1/2 cups purée to medium bowl (reserve remaining purée for another use).
  2. Step 2 Mix yogurt, 4 tablespoons sugar, spiced rum, fresh lime juice, and chopped mint into purée. Sweeten sauce to taste with more sugar, if desired.
