Sponge:

  • 1 cup lukewarm water
  • 1 envelope active dry yeast, divided
  • 1 cup all purpose flour, divided

Dough:

  • 1 1/2 cups lukewarm water
  • 2 tsps. fine sea salt
  • 1 envelope active dry yeast
  • 6 cups all purpose flour
  • Olive oil
  • Yellow cornmeal
  • Sauces and toppings

Directions

  1. Step 1 Toast first 3 ingredients in small skillet over medium-high heat until fragrant, shaking skillet, about 1 minute.
  2. Step 2 Coarsely grind spices in mortar and pestle or spice grinder. Transfer to large bowl; mix in oil, ginger, chile sauce, cinnamon, and honey.
