Spicy coleslaw with cumin-lime dressing with fresh lime juice, ground cumin, garlic clove, minced, hot pepper sauce, olive oil.

- 1/3 cup fresh lime juice
- 1/2 tsp. ground cumin
- 1 garlic clove, minced
- 1/2 tsp. hot pepper sauce
- 1/2 cup olive oil

Tomatoes
- 2 cups halved cherry tomatoes
- 1 cup chopped fresh Italian parsley
- 1/4 cup coarsely chopped pitted Kalamata olives or other brine-cured black olives
- 1/4 cup coarsely chopped pitted brine-cured green olives
- 1/4 cup chopped fresh basil
- 1/4 cup extra-virgin olive oil
- 2 tbsps. Sherry wine vinegar
For the pork:
- 2 pork tenderloins, about 1 1/2 lb. each
- 2 tbsps. mild vegetable oil, such as canola
- Salt and freshly ground black pepper
Spicy Sabayon Sauce
For Serving
- 2 pints fresh raspberries
- Six mint sprigs
Directions
- Step 1 Cook carrots in medium saucepan of boiling salted water until crisp-tender, about 2 minutes. Drain.
- Step 2 Whisk lime juice, cumin, garlic and hot pepper sauce in medium bowl. Gradually whisk in oil. Season with salt and pepper.
