Spicy shrimp with andouille sausage on grits with olive oil, smoked andouille sausage,** sliced, red bell pepper, chopped, yellow bell pepper, chopped, minced onion, garlic cloves, chopped, uncooked large shrimp, peeled, deveined, plum tomatoes, chopped, cajun seasoning, old bay seasoning.

Ingredients

  • 1/4 cup olive oil
  • 8 oz. smoked andouille sausage,** sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 cup minced onion
  • 4 garlic cloves, chopped
  • 30 uncooked large shrimp, peeled, deveined
  • 4 plum tomatoes, chopped
  • 1 tsp. Cajun seasoning
  • 1 tsp. Old Bay seasoning

Grits

Shrimp

  • 6 tbsps. unsalted butter
  • 6 tbsps. all-purpose flour
  • 2 medium green bell peppers, seeded and chopped
  • 2 medium onions, chopped
  • 2 jalapeño peppers, seeded and finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 tsps. salt
  • Freshly ground black pepper to taste
  • 2 cups heavy cream
  • Two 14 1/2-ounce cans diced tomatoes
  • 2 lb. large shrimp, peeled and deveined
  • Tabasco or other hot sauce to taste
  • 1/2 cup grated Parmesan cheese, for garnish
  • 2 tbsps. chopped fresh parsley, for garnish

Equipment:

  • 1 tart pan or 2 tart pans

For cooking and serving crêpes

  • 4 tsps. vegetable oil
  • 6 oz. fresh soybean or mung-bean sprouts , trimmed
  • 1/4 cup chopped scallions
  • 1 small head green or red leaf lettuce
  • 1/2 cup loosely packed fresh mint leaves
  • 1/2 cup loosely packed fresh basil leaves
  • 1/2 cup loosely packed fresh cilantro sprigs
  • Lime wedges

For Serving

Directions

  1. Step 1 Combine hot pepper sauce, wine, shallot, lemon juice and vinegar in heavy medium saucepan. Boil over medium heat until reduced to 1/2 cup, about 15 minutes.

  2. Step 2 Bring 1/2 cup cream, 5 cups water, milk and butter to simmer in heavy medium saucepan. Gradually whisk in grits.

  3. Step 3 Meanwhile, heat olive oil in heavy medium skillet over medium heat. Add sausage, both bell peppers, onion and garlic; sauté until vegetables are tender, about 8 minutes.

  4. Step 4 Add shrimp, tomatoes, Cajun seasoning and Old Bay seasoning and sauté until shrimp are opaque in center, about 6 minutes.

  5. Step 5 Bring hot pepper-cream sauce to simmer. Spoon grits onto 6 plates, dividing equally. Spoon shrimp mixture over grits.
