Spicy spinach and goat cheese pizzas with 6-inch purchased fully baked pizza crusts, 3- to 3 1/2-ounce package soft fresh goat cheese with garlic and herbs.

  • 2 large eggs
  • 1 lb. cream cheese, softened
  • 2 tbsps. unsalted butter
  • 1 cup grated Monterey Jack cheese
  • 1 1/2 cups grated sharp Cheddar
  • 1 tbsp. minced fresh dill leaves
  • 1/4 cup chopped fresh cilantro

For salsa

For topping

  • Special equipment: a mandoline or similar manual slicer such as a Japanese ; a deep-fat thermometer

For dipping sauce:

  1. Step 1 Preheat oven to 425°F. Heat oil in heavy large skillet over medium heat. Add spinach; toss until beginning to wilt, about 2 minutes.
