Spicy Whipped Feta Recipe

Spicy whipped feta with soft greek feta, thick greek or mediterranean-style yogurt or drained plain yogurt, extra virgin greek olive oil as needed, finely ground black pepper, or more or less to taste, fresh lemon juice to taste.

- 1 lb. soft Greek feta
- 1/2 cup thick Greek or Mediterranean-style yogurt or drained plain yogurt
- 1/2 to 2/3 cup extra virgin Greek olive oil as needed
- 1 tsp. finely ground black pepper, or more or less to taste
- 2 to 3 tbsps. fresh lemon juice to taste
For the filling:
- 1 lb. commercial phyllo, defrosted and at room temperature
Skordalia
- 1 lb. russet potatoes, peeled, cut into 3/4-inch cubes
- 6 tbsps. whipping cream
- 1/4 cup butter
- 1 tbsp. sour cream
- 1 cup sliced almonds, toasted, cooled, finely ground
- 1 tbsp. fresh lemon juice
- 1 garlic clove, minced
Eggplant
- 3/4 cup thinly sliced fresh basil
- 1 cup oil-cured olives
Spicy Sabayon Sauce
For Serving
- 2 pints fresh raspberries
- Six mint sprigs
Directions
- Step 1 1. Crumble the feta. Place it in the bowl of a food processor and pulse together with the yogurt until smooth.
