Spicy yogurt cooler with well-chilled plain yogurt, fresh coriander sprigs, washed well, spun dry, and chopped coarse, chopped peeled fresh gingerroot, fresh serrano chili, seeded and chopped, ground cumin.

  • 4 cups well-chilled plain yogurt
  • 1 cup fresh coriander sprigs, washed well, spun dry, and chopped coarse
  • 1 tbsp. chopped peeled fresh gingerroot
  • 1 fresh serrano chili, seeded and chopped
  • 1 tsp. ground cumin

For dressing

For tandoori marinade

  • 2 lb. medium shrimp , shelled and deveined
  • 1/4 cup vegetable oil for frying
  • 6 cups packed tender watercress sprigs, washed well and spun dry
  • 1 cup fresh coriander sprigs, washed well and spun dry
  • 3 red bell peppers, cut into julienne strips
  • 2 firm-ripe mangoes, peeled and cut into julienne strips

Minted yogurt

  • 2/3 cup Greek yogurt
  • 2 green onions, thinly sliced
  • 2 tbsps. chopped fresh mint

  1. Step 1 In a blender blend together lassi ingredients until smooth and pale green, about 1 minute. Serve lassi in chilled glasses.
