Springtime sangria with red or white wine, orange juice, triple sec, apricot brandy, sprite, apple, cored and diced, red or green grapes, 1/2 small cucumber, peeled, seeded and diced, 4-5 ice cubes.

  • 1 1/2 cups red or white wine
  • 3/4 cup orange juice
  • 1/3 cup triple sec
  • 1/3 cup apricot brandy
  • 1/3 cup Sprite
  • 1 apple, cored and diced
  • 1 cup red or green grapes
  • 1/2 small cucumber, peeled, seeded and diced
  • 4-5 ice cubes

For lamb:

  • 2 tsps. kosher salt, or to taste
  • 1 tsp. freshly ground black pepper, or to taste
  • 2 tbsps. extra-virgin olive oil
  • 2 1/2 to 3 lb. boneless lamb, from the shoulder or leg, cut into 1- to 2-inch cubes
  • 6 garlic cloves, peeled and slivered
  • 2 cups chicken or lamb stock, white wine, water, or a combination
  • 1 large horseradish root

For purée:

Sauce:

  • 1 cup fresh tangerine juice or tangelo juice
  • 2 tbsps. honey
  • 4 tangerines or 3 tangelos, peeled, separated into segments

Port Sauce

  • 2 cups tawny Port
  • 1/2 cups sugar
  • 1 tbsp. water
  • 2 tsps. cornstarch

Dulce de leche:

  • 1/4 cup dulce de leche

Malted milk ball:

  • 1/2 cup chopped malted milk balls
  • 2 tbsps. chocolate malted powder

Espresso chocolate chunk:

  • 1/2 cup coarsely chopped semisweet chocolate
  • 2 tsp. espresso powder

Very berry:

Peppermint fudge:

  • 3 tbsps. fudge sauce
  • 1/4 cup crushed peppermint candies
