Steak sandwiches with crispy onions with thinly sliced onions, unsalted butter, olive oil, thinly sliced mushrooms, garlic clove, minced, beef broth, heavy cream, ketchup, worcestershire sauce, or to taste, dijon-style mustard, grilled steak, cut into 1/8-inch thick slices, long loaf of italian-style bread, halved horizontally and each half buttered lightly, cut into 4 pieces, and toasted.


  • 1 cup thinly sliced onions
  • 2 tbsps. unsalted butter
  • 1 tbsp. olive oil
  • 3/4 cup thinly sliced mushrooms
  • 1 garlic clove, minced
  • 3/4 cup beef broth
  • 1 1/2 tbsps. heavy cream
  • 3 tbsps. ketchup
  • 1 1/2 tbsps. Worcestershire sauce, or to taste
  • 1 tsp. Dijon-style mustard
  • 1 lb. grilled steak, cut into 1/8-inch thick slices
  • 1 long loaf of Italian-style bread, halved horizontally and each half buttered lightly, cut into 4 pieces, and toasted

For the dressing

  • 1 cup thinly sliced arugula, washed well and spun dry
  • 20 Parmesan curls made by shaving a wedge of Parmesan with a vegetable peeler, or to taste
  • freshly ground black pepper to taste

For the coulis

  • diced orange bell peppers for garnish
  • minced fresh chives for garnish

For the tuna layer:

  • 2 plum tomatoes, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, sliced thin
  • 1/4 cup sliced pitted Kalamata or other brine-cured black olives
  • toasted pita triangles

For topping

  • Special equipment: a mandoline or similar manual slicer such as a Japanese ; a deep-fat thermometer

For dipping sauce:

  • Special equipment: a 12-inch bamboo steamer; a 6-inch rolling pin or dowel; a well-seasoned 14-inch wok with a lid



  1. Step 1 In a skillet cook the onions in the butter and the oil over moderate heat, stirring occasionally, until they are crisp and golden and transfer them with a slotted spoon to paper towels to drain.

  2. Step 2 In the fat remaining in the skillet cook the mushrooms and the garlic over moderately low heat, stirring occasionally, until the mushrooms begin to turn brown and transfer the mixture to a plate.

  3. Step 3 Add the broth to the skillet and deglaze the skillet, scraping up the brown bits. Add the cream, the ketchup, the Worcestershire sauce, and the mustard and stir in the mushroom mixture and the steak slices.
