Steamed broccoli rabe with bunches broccoli rabe , coarse and hollow stems  discarded and remainder washed and drained, extra-virgin olive oil, dried hot red pepper flakes.

  • 4 bunches broccoli rabe , coarse and hollow stems  discarded and remainder washed and drained
  • 1/4 cup extra-virgin olive oil
  • 1/4 tsp. dried hot red pepper flakes

For sorbet

  • 8 cups 1/2-inch-thick slices trimmed rhubarb
  • 1/2 cup orange juice
  • 1/2 cup pomegranate juice*
  • 2 1/2 tbsps. Grand Marnier or other orange liqueur
  • 1/8 tsp. salt

For compote

  • * Available at Middle Eastern and natural food stores.

For the garnish:

  • 1 cup fresh cilantro leaves, firmly packed
  • 3 scallions, trimmed and minced

  1. Step 1 In a large steamer set over boiling water steam broccoli rabe, covered, until tender, about 5 minutes, and transfer to a platter.
