Strawberry Sorbet Recipe

Strawberry sorbet with frozen unsweetened strawberries, thawed, simple sugar syrup, orange juice.

Ingredients

Sweet pie dough:

  • 2 cups all-purpose flour
  • 1 tsp. salt
  • 2 tbsps. sugar
  • 1/2 cup cold unsalted butter, cut into small pcs.
  • 1/3 cup cold vegetable shortening
  • 5 or 6 tbsps. ice-cold water

Filling:

  • 2 lb. sour cherries, pitted
  • 1 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 tsp. almond extract
  • 1 egg white, lightly beaten

For peaches-and-cream filling

  • Equipment: a large pastry bag fitted with a 3/4-inch plain tip

Garnish:

  • Equipment: 3 4-sided sheet pans

  • Special equipment: A 9-inch springform pan; a small offset metal spatula

Directions

  1. Step 1 Purée the strawberries with 1/4 cup of the Simple Sugar Syrup in a food processor until smooth.

Strawberry sorbet recipe

Strawberry sorbet with quart ripe strawberries, stemmed, sugar, water.

Ingredients

For ginger syrup

  • 3 cups water
  • 2 cups sugar
  • 2 cups thinly sliced fresh ginger , left unpeeled

For fruit salad

  • 4 cups summer fruit
  • 3 tbsps. small mint leaves

  1. Step 1 Cut any large strawberries in half. Arrange the strawberries on a baking sheet lined with parchment paper and place in the freezer for 2 hours, or until the berries are completely hard frozen.

  2. Step 2 Put the berries in a food processor along with the sugar and pulse the machine on and off until the fruit is broken up.

  3. Step 3 Add the water and continue to run the blades until you achieve a smooth purée. Transfer the sorbet to a quart container and freeze for 2 hours, or until just firm enough to scoop.
