Syrian pumpkin patties with fine bulgur, warm water, pure-pack canned pumpkin, whole-wheat or unbleached all-purpose flour, cold water, onion, chopped, to 4 cloves garlic, minced, kosher salt, ground coriander, ground black pepper, ground allspice, ground cumin, pinch of aleppo or cayenne pepper, vegetable oil for frying.


  • 1 cup fine bulgur
  • 2 cups warm water
  • 2 cups mashed cooked pumpkin or 16 oz. pure-pack canned pumpkin
  • 1 cup whole-wheat or unbleached all-purpose flour
  • 1/2 cup cold water
  • 1 onion, chopped
  • 3 garlic minced
  • About 1/2 teaspoon table salt or 1 tsp. kosher salt
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground black pepper
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground cumin
  • Pinch of Aleppo or cayenne pepper
  • Vegetable oil for frying

Poached Pears

  • 1 bottle full-bodied red wine such as Zinfandel
  • 1/2 cup sugar
  • 1 vanilla bean, split lengthwise
  • 3-inch stick canela
  • 1 tsp. anise seeds
  • 1 tbsp. finely grated lemon zest
  • 6 whole Anjou pears, peeled, cored, and hollowed

  • 4 large egg yolks
  • 3/4 cup dry white wine
  • 2 tbsps. sugar
  • 1/8 tsp. chile powder

  1. Step 1 2. Transfer the bulgur to a food processor. Add all of the remaining ingredients except the oil and process until smooth.

Syrian Baked Pumpkin Casserole (Kibbet Yatkeen bi Seniyeh):

  1. Step 6 Spread the pumpkin mixture in an oiled 9-inch square baking pan. Cut into diamonds or 1 1/2-inch squares, drizzle with 1/4 cup vegetable oil, and bake in a preheated 375°F oven until golden brown, about 45 minutes.
