Toffee apple cider cake with cider, apple(s), unrefined light muscovado sugar, butter (unsalted), unrefined golden caster sugar, egg(s) (free range), plain white flour, baking powder, cinnamon. To make this toffee apple cider cake for 12 persons you will need 25 mins for preparation and 35 mins for baking.

Ingredients

  • 300ml Cider
  • 4 Apple(s)
  • 200g Unrefined light muscovado sugar
  • 150g Butter (unsalted)
  • 110g Unrefined golden caster sugar
  • 2 Egg(s) (free range)
  • 225g Plain white flour
  • 1tsp Baking powder
  • 1tsp Cinnamon

Directions

  1. Step 1Butter a 20cm / 8″ round non stick cake tin (not loose based) and line with non-stick baking paper.  In a small pan heat the cider until boiling then reduce the heat and simmer gently until reduced by half.

  2. Step 2Remove from the heat and leave until cold. Preheat the oven to 190°C (170°C fan, gas mark 5).
  3. Step 3Peel and core the apples and cut into thick slices.

  4. Step 4Heat 25g butter and the light muscovado sugar in a pan until melted, stirring occasionally.

  6. Step 6Arrange the sliced apples on top of the caramel.
  7. Step 7Cream the rest of the butter and golden caster sugar until light and gradually beat in the eggs.
