Tuscan turkey sauce and pasta with 5- to 6-pound turkey, cut in quarters and prepared as for turkey chili, large onions, coarsely chopped, butter, olive oil, large ripe tomatoes, peeled, seeded, and chopped, dried basil, salt, freshly ground pepper to taste, hot spaghettini, cooked al dente and drained, grated romano cheese, grated parmesan cheese.

  • 5- to 6-pound turkey, cut in quarters and prepared as for Turkey Chili
  • 2 large onions, coarsely chopped
  • 3 tbsps. butter
  • 3 tbsps. olive oil
  • 6 large ripe tomatoes, peeled, seeded, and chopped
  • 1/2 cup fresh basil leaves, finely chopped, or 2 to 3 tsps. dried basil
  • Salt, freshly ground pepper to taste
  • 2 to 3 lb. hot spaghettini, cooked al dente and drained
  • Grated Romano cheese
  • Grated Parmesan cheese

Directions

  1. Step 1 Cook the turkey in water with onion, celery, parsley and peppers, as for Turkey Chili. Remove and cool.
