Whole grain-buttermilk pancakes with whole wheat flour, quick-cooking oats, yellow cornmeal, all purpose flour, baking powder, baking soda, salt, buttermilk, large eggs, butter, melted, mild-flavored molasses, pure maple syrup.

  • 1 cup whole wheat flour
  • 1/3 cup quick-cooking oats
  • 1/3 cup yellow cornmeal
  • 1/3 cup all purpose flour
  • 2 tsps. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 cups buttermilk
  • 2 large eggs
  • 4 tbsps. butter, melted
  • 2 tbsps. mild-flavored molasses
  • Pure maple syrup

Streusel Topping:

  • 1/2 cup granulated or brown sugar, or 1/4 cup each
  • 1/2 cup all-purpose flour
  • 3/4 tsp. ground cinnamon
  • 1/8 tsp. salt
  • 1/4 to 1/2 tsp. ground nutmeg or cloves
  • 1/4 cup unsalted butter or margarine, softened
  • 1/2 cup coarsely chopped walnuts or pecans, grated coconut, golden raisins, or chocolate chips, or 1 cup any combination

Batter:

  • 2 cups all-purpose flour
  • 1 tsp. double-acting baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter or margarine, softened
  • 1 cup granulated or brown sugar or 1/2 cup each
  • 4 egg
  • 1 cup sour cream or plain yogurt
  • 1 1/2 tsps. vanilla extract
  • 1 tsp. finely grated lemon zest

Glaze (optional):

  • 1 cup confectioners’ sugar
  • 1/2 tsp. vanilla or almond extract
  • 1 to 2 tbsps. milk or water

  1. Step 1 Mix first 7 ingredients in medium bowl to blend. Whisk buttermilk, eggs, 2 tablespoons melted butter and molasses in large bowl to blend.
