Wilted cabbage with mustard and horseradish with unsalted butter, large onion, halved lengthwise and thinly sliced, to 2 1/2 lb green cabbage, quartered, cored, and cut crosswise into 1/4-inch-thick strips, salt, water, coarse-grain mustard, bottled horseradish, all-purpose flour. To make this wilted cabbage with mustard and horseradish for 4 persons you will need 15 min for preaparation and 30 min for baking.

  • 3 tbsps. unsalted butter
  • 1 large onion, halved lengthwise and thinly sliced
  • 2 to 2 1/2 lb green cabbage, quartered, cored, and cut crosswise into 1/4-inch-thick strips
  • 3/4 tsp. salt
  • 1 cup water
  • 1 tbsp. coarse-grain mustard
  • 1 tsp. bottled horseradish
  • 1 tsp. all-purpose flour

Preheat oven to 425°F. Butter 8-inch square baking pan. In medium skillet, sauté over mediumheat until lightly browned, about 4 minutes:

  • 4 oz. sliced pancetta, chopped

  • 3/4 cup stone-ground or regular yellow cornmeal
  • 3/4 cup all purpose flour
  • 2 tbsps. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. coarse kosher salt

  1. Step 1 Heat butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté onion, stirring occasionally, until lightly browned, about 5 minutes.
